Mini Peanut Butter Protein Muffins

Made these mini Peanut butter muffins today 😍

Super simple, high in protein and low in carbs. Gimme!

Ingredients

1/2c peanut butter

4 eggs

1/2c protein powder

2tsp baking powder.

sweetener of choice

Method

Line a mini muffin tin (i used squares of baking paper).

Combine all ingredients in a mixing bowl. Add sweetener to taste.

Bake at 150*C (fan forced) until golden.

 

I keep these mini muffins in the freezer, perfect to grab as I dash out the door to work, and its defrosted by morning tea! 😉 How will you use them? Tell me in the comments below! xx
